Decadent. Earthy. Rich. Exotic. Sumptuous. These are just some of the terms used to describe the one-of-a-kind taste of truffle mushrooms. The crown jewel of the forest, there’s a reason these marvelous pieces of fungus have captured the hearts and imaginations of chefs around the world!
We’ve already told you about the upcoming Truffle Festival here in Napa Valley, where chef Ken Frank and a coterie of talented chefs from around the world share their vision of how to perfectly prepare this exquisite ingredient, but one of the biggest draws to the festival is that it’s your chance to buy truffles to take home with you!

When faced with such a luxurious and rare ingredient, it’s easy for the home cook to feel intimidated; even the most ardent foodie may freeze up, overwhelmed with pressure and possibilities! But here are some tips for making the most of your bounty of truffles.

When cooking with truffles one key is to make sure that they’re center stage. When dealing with such a big flavor, you don’t want to balance it with competing tastes. Better to serve it with dishes that won’t try to stand in the way of the truffle: think pasta, chicken, egg… and if you want a classic pairing, other, less powerful mushrooms!

Cream sauces and butter are a great way to deliver truffles, because they both serve and soften the taste (milk fat is a fantastic flavor enhancer), but a few shavings is a great way to enhance otherwise pedestrian dishes – imagine pillowy scrambled eggs served with a crisp green salad with a few shavings of truffle over top! The effect is transformative.

Bought too many truffles, or fear you will run out of time to use them? Have no fear: by emulsifying truffles in butter you will preserve their incredible flavor and be able to add it to your favorite dishes for weeks to come! It even freezes! Here is our favorite method for doing so.
